Sarah Conezio and Isaiah Billington met 10 years ago while running the pastry kitchen at Woodberry Kitchen in Baltimore, where there they cultivated a deep commitment to local agriculture and food preservation. They left in 2014 to open Keepwell Vinegar and White Rose miso, companies making vinegar, miso and soy sauce using products sourced directly through the relationships they have maintained over the years with growers and land stewards in MD, PA, NJ and VA. Still harboring a fascination with cooking and pastry, their cuisine leans toward the deeply unique fruit, vegetable and grain-centric flavors developed only through long fermentation as a reflection of the local mid-Atlantic bounty.
